Guests will enjoy five courses prepared by Carte Hotel’s Executive Chef, Phil Hoffer at our private event venue, Fonte di Vino. Each course will be paired with a curated cocktail by Bar Manager, Sam Walton, sponsored by Lalo Tequila.

Course 1 • Ajo Blanco, Chorizo de Bellota Iberico, Marcona Almonds, Spanish Roja Garlic, Muscat Grapes, Sugar Cube Melon | Paired with Lalo Blanco, verdita, verjus blanc, lime, soda water

Course 2 • Mussels and Boquerones Escabeche, Heirloom Tomato and Peach Carpaccio, Quatro Pepe Garlic Vinegar, Lemon Basil, Lemon Sea Salt | Paired with tomato and basil infused Lalo Neat

Course 3 • Scallop and Octopus, Citrus Ricotta Gnudi, Italian Sweet Long Peppers, Golden Thread Mushrooms, Hoja Santa Pesto | Paired with Lalo Blanco, Strega, Saffron, Honey, Kiwi, Lime

Course 4 • A5 Wagyu Beef, Huitlacoche Tortilla, Guajillo Pepper Puree, Squash Blossom, Summer Squash Cream | Paired with Lalo Blanco, Palo Santo , Agave , Lime , Orange bitters , Sal de Gusano

Course 5 • Strawberry Mille Crepe Cake, Strawberry Agave Compote, Tequila Infused Bee Pollen, Freeze Dried Manuka Honey | Paired with Lalo Blanco , Dry Vermouth, Lillet Blanc, Luxardo Bianco, Cointreau Rinse
