
APPLE A DAY
Ripe Fuji, Granny Smith and other apples are at the Little Italy farmers’ market
now. Check out Smit Orchards, Lone Oak Ranch and other farm stands and choose
your favorite. Not only are they a convenient snack, but apples really do “keep
the doctor away” with phenols to curb cholesterol, Vitamin C to boost the immune
system, and bacteria killing properties that prevent tooth decay. All that
and great taste, too!

LAST HATCH BATCH
Folks who appreciate the rich heat of Hatch chiles from New Mexico wait all
year for Richie’s Roasted Peppers to offer them at local farmers’ markets.
Richie is on his last run of the season now, and this Saturday will be the
last day to get these wonderful chili peppers at the Mercato. We love them
in this recipe:
Chile Relleno Fresca
For filling, saute 1 small chopped onion and 2 crushed cloves garlic in a little olive
oil, until translucent.
Mix 2 chopped heirloom tomatoes from your favorite farmer, 1 cup
shredded Pepper Jack cheese from Springhill Farms, ½
tsp each salt, cayenne and cumin from Just Spice, and sautéed onion
mix.
Rub
the blackened skin off 4 large Hatch Chiles*. Cut a small slit in
top near stem and stuff gently with filling. Cover bottom of frying
pan with olive or grapeseed oil and heat to medium high. Separate
2 eggs and fold yolk into beaten egg white. Dip stuffed chilis
in egg, then pan fry until golden brown on both sides. Serve garnished
with chopped tomatoes, cilantro, onion and your favorite hot
sauce. *
Be careful not to touch face or eyes while handling chiles. Wash
hands thoroughly with salt, soap and water after cooking. |

Author and photographer Douglas Gayeton will sign copies of SLOW:Life in a
Tuscan Town at the Mercato on October 3, and Chef Pete Balistreri of Tender
Greens will demonstrate recipes based on the book. A portion of the $55 purchase
